Amedei boldly rescued legendary pure Criollo cacao from Chuao to make an internationally recognized artisan chocolate bar. This intense and flavorful cacao has been tamed after 20 days of refining into something balanced, yet potent, fruity with notes of plum, blackberry and blueberry. The Venezuelan town of Chuao is a legend in the chocolate world. There are no roads, so you must approach the area by sea to experience a place where cacao cultivation has been passed down between families for centuries. Realizing the immense potential of these pure Criollo beans, Amedei signed up for world–wide exclusivity with the campesinos for the Chuao plantation. Then began the work of helping the farmers to advance cultivation and bring the chocolate to an international market. Although Chuao is normally blended with other cacao to boost their flavor and aromas, Cecilia took on the challenge of taming pure Chuao Criollo chocolate into something balanced and fruity.
