Limited Edition Palmira - Single origin Venezuela - Vintage 2009 - 64% Cacao Dark Chocolate 75g (2.64oz).

Valrhona's chocolat de domaine bars use single origin, estate grown cacao. Like a single-vineyard wine, this single-estate bar offers up the unparalleled character of the Criollo bean born from the local climate and soil conditions. It is not enough for Valrhona to simply buy the finest of all flavor beans - Criollo. Instead they own the plantation and meticulously control all the steps leading up to a world-class dark chocolate bar. Imported from France.

Ingredients: cocoa beans from Venezuela, sugar, cocoa butter, emulsifier (soya lecithin), and vanilla. This product may contain traces of nuts, milk and egg proteins, gluten and peanut.

PROFILE: Valrhona

The venerable Valrhona has been making chocolate in the Rhone Valley of France since 1922. Famous as a leader in the premium chocolate world, they are not satisfied to rest on their laurels, but continue to innovate to produce many new products such as the Grand Crus and Grand Couva chocolat de domaine. Valrhona is so well respected that they operate a chocolate and pastry school in France and their couverture chocolate is highly sought after by top chefs world wide.

The Grand Crus use top flavor beans from specific cacao growing regions of the world. Valrhona has had years to experiment with bean varieties and sources so as to perfect the final product. The Chocolat de Domaine bars are single–estate chocolates – the outcome of exclusive partnerships between Valrhona and top estates to produce exceptional chocolate bearing the unique flavors of the locality. We've selected some of the less well known, but top tier bars for you to try.

Valrhona's answer to the fair trade movement is a comprehensive program they call “ethical trade.” They state: “Ethical trade aims to uphold minimal social and environmental conditions, which are based on recognized international standards, such as those of the International Labor Organization advocating for employees' rights (minimum wage, freedom of association, etc.); ethical trade also favors social advancement for employees of these businesses. Ethical trade encourages and develops optimal working conditions for producers.” This includes working in partnership with cacao growers to provide technical assistance, guaranteed volume and stable, long–term relationships. This ensures that they can advance the farming methods of each partner and achieve exceptional quality long term.
